Natural Beet Red Powder

Beet red is obtained from red beet. Its pigments include betanin and give pink to slightly purplish red shades. It is used to color milk drinks, cream, and confectionery. This product is a water-soluble powder.

Unlike anthocyanins, beet red is relatively less affected by ordinary pH and protein changes, but is sensitive to heat and light. It is better suited to low-heat or cold processing, or adding after food has cooled. Iron, copper ions, and oxygen may also affect its color.
